How to eat Shabu-shabu
(1)When sea weed stock is boiled, put a paper-thin sliced beef between chopsticks and then dip and gently swish it in there for just a few seconds. (there are numerous theories regarding its origin but this move or sound is called; Shabu-shabu; in Japanese).
For the beef, you can eat when it turns to pink color.
Pick it up as soon as the color starts to change. Pay attention not to overcook the meat, pink color is the best tyming.
(2)Typically, two kinds of sauces are prepared: Goma-dare (sesame sauce) and Ponzu (soy sauce and citrus juice).
Dip the cooked beef in one of them.
(our original Goma-dare (sesame sauce) or Ponzu (soy sauce and citrus juice)
Use Ponzu when you feel like having lighter taste and Goma-dare when you’re in favor of rich flavor.
(3)After that, put vegetables in the same pot little by little and simmer.
Dip in sauce and eat when they are cooked. Skim off any surface scum.
